
Dan-O’s – Chili Lime Fried Corn
This Chili Lime Fried Corn is a true winner! It’s incredibly easy to make and perfect for a backyard BBQ or a cozy dinner at home. The sweet, juicy corn pairs beautifully with the sautéed red onions and bell peppers, all enhanced by the bold flavors of Dan-O’s Chili Lime. Serve this side dish, and you’ll be the winner for dinner!
Ingredients:
- 2 tbsp Dan-O’s Chili Lime Seasoning
- 4 ears of corn (or 2 cups of canned/frozen corn)
- ½ stick unsalted butter
- ½ red onion, diced
- 1 whole red bell pepper, diced
- Juice of 1 lime
Garnish
- Diced Jalapeno
- Chopped Cilantro
- Mexican Crème
Instructions:
1. Prepare the Ingredients: If using fresh corn, shuck the ears and cut the kernels off. If using canned or frozen corn, measure out 2 cups. Dice the red onion and red bell pepper.
2. In a large cast iron skillet, melt the ½ stick of unsalted butter over medium-high heat. Once the butter is melted, add the diced red onion and red bell pepper to the skillet. Sauté for a few minutes until they start to soften.
3. Stir in the corn, spreading it out evenly in the pan. This will help achieve a nice roasted flavor.
4. Squeeze the juice of one lime over the corn mixture.
5. Add Dan-O’s Chili Lime Seasoning, mixing well to ensure the corn is evenly coated.
6. Increase the heat to high and allow the corn to cook without stirring for about 3-4 minutes. This will help achieve a nice browning on the corn.
7. After 3-4 minutes, give everything a gentle stir and spread it back out. Repeat this process a couple of times until the corn is nicely browned and has a roasted flavor.
8. Transfer the chili lime fried corn to a serving bowl. Garnish with diced jalapeño, chopped cilantro, and a drizzle of Mexican crème.
